Charcoal Roasted Tie Guan Yin 炭焙铁观音 is a traditionally processed Oolong from Xianghua Village, Anxi County, Fujian Province. It has tightly rolled dark leaves that clearly indicate a higher level of oxidation and level of roasting. Based on a standard in China (as opposed to Taiwan), the leaves in the resulting tea are stemless. Unlike the popular modern slightly oxidized Tie Guan Yin tea from Anxi, this traditional version is carefully roasted several times over pine wood charcoal. And not only that... this tea has been expertly aged in Anxi since 2019 and has been re-roasted several times during that time. Charcoal roasting (or "baking" if you prefer) results in a complex flavor with a subtle interplay between spicy roasted and sweet floral notes. The tea demonstrates a perfect balance, and none of the flavors deviate too far or disturb the harmony. When brewed, the tea offers a clear amber liqueur with a roasted floral aroma. Warming flavors are smooth, balanced, with a distinct roasted and floral profile. As with all roasted teas, this one is easy to store and suitable for aging. More
