Made from hand-picked leaves of the Jin Xuan 金萱 (TRES #12) cultivar, this tea has been selected as the most typical representative of traditional Dong Ding Oolong. The tea has dark leaves with a delicate roasted aroma. It brings an infusion of a golden copper color and a creamy floral delicately roasted aroma. The taste is complex and multi-layered with notes of malt and roasted buckwheat. Tasting begins with a fruity sour light taste that freely transitions into roasted, creamy sweet finesse. The finish is refreshing, slightly spicy. None of the flavors are overly dominant and the roasted notes complement the overall impression appropriately. Being a traditional style of tea, it has gone through a lengthy and complex roasting process to create a tea that offers the perfect balance between fresh floral and roasted creamy notes. It went through the charcoal roasting process five times, with one roast taking over 12 hours. In total, the tea spent more than 60 hours on hot charcoal.
