Maitake (Grifola frondosa) is a type of wood-decay fungus with fascinating properties. This mushroom is most commonly found at the base of living oak trees and other hardwoods. Maitake is best known in Asia, where it has been prized for thousands of years not only as a delicious culinary ingredient but also for its medicinal effects. Historical sources explain why it's called the "dancing mushroom"—mushroom hunters would literally dance with joy upon finding it. Maitake contains many biologically active substances, including beta-glucans, glycoproteins, grifolic acid, and amino acids. From the perspective of Chinese medicine, it supports the center, strengthens the Pi (Spleen) and Wei (Stomach), which helps to cleanse the body and harmonize metabolism. It is sometimes called the "preventative mushroom for old age" due to its beneficial health effects. Maitake is thus not only a culinary treasure but also a valuable tool in traditional medicine that has earned admiration and respect worldwide. More
