Jin Guan Yin 金观音 is one of the most fascinating modern cultivars used for producing Wuyi rock oolong teas from the famous Wuyi Mountains 武夷山 in northern Fujian. Developed through selective breeding at the beginning of the 21st century, it is a cross between two legendary tea cultivars – Tie Guan Yin 铁观音 from Anxi and Huang Jin Gui 黄金桂, celebrated for its intensely floral fragrance. The result is a cultivar that combines the elegance and smoothness of Tie Guan Yin with the rich aromatic expression of Huang Jin Gui while adapting exceptionally well to the traditional processing methods of Wuyi yancha.

The tea bushes grow on the rocky slopes of the protected Wuyi Mountain area, whose unique landscape of red sandstone cliffs and ancient volcanic formations gives local teas their distinctive mineral character known as yan yun 岩韵, or "rock rhyme". Frequent mountain mists, significant differences between daytime and nighttime temperatures, and the slow growth of the tea plants all contribute to the remarkable complexity and concentration of aromatic compounds found in the finished tea.

Like other high-quality Wuyi oolongs, Jin Guan Yin undergoes an elaborate multi-stage production process. Freshly picked leaves are first withered under the sun before resting indoors. They are then gently shaken in bamboo trays several times to encourage controlled oxidation along the leaf edges, creating the characteristic aromatic profile of traditional oolong tea. Once the desired oxidation level is reached, the process is halted by heating the leaves, followed by rolling and several rounds of careful roasting using either traditional charcoal or modern electric roasting techniques. This meticulous roasting gives the tea its remarkable depth, smooth body and long-lasting finish.

The dry leaves are tightly twisted into long dark brown strips with subtle mahogany and olive tones. Once infused, they release an elegant bouquet of orchids, lilac blossoms, ripe stone fruits, honey, and delicate hints of vanilla and caramel. The liquor shines with a bright golden-amber colour and offers a rich, velvety body where floral sweetness blends seamlessly with gentle fruit notes, refreshing minerality, and refined roasted nuances. The lingering sweet aftertaste gradually develops into a pleasant cooling sensation in the mouth.

Jin Guan Yin beautifully demonstrates how modern Chinese tea breeding can build upon centuries of Wuyi tea tradition while introducing a fresh aromatic dimension. Its balance of floral elegance, mineral complexity and gentle roasting makes it an excellent choice both for experienced yancha enthusiasts and for those discovering the world of Wuyi rock oolongs for the first time.

Gong Fu Preparation

Use approximately 7–8 g of tea for 120–150 ml of water at 95–100 °C. Infuse the first brew for about 10–15 seconds, then gradually increase the infusion time with each subsequent steeping. A high-quality Jin Guan Yin will comfortably yield 7–10 flavourful infusions, revealing an evolving character from vibrant floral notes to deeper mineral sweetness.

Western Preparation

Use 3 g of tea for 250 ml of water at 95 °C. Steep for 2–3 minutes. Prepare the second infusion for about 4 minutes and the third for 5–6 minutes. Each infusion reveals new layers of aroma and flavour while highlighting the tea's characteristic sweetness and elegant mineral profile.
