Unlike raw pu-erh (Sheng 生茶), ripe pu-erh (Shu 熟茶) goes through an accelerated aging process. In this process called wet-piling (Wo Dui 渥堆), the loose tea leaves are piled and sprayed with water then left to ferment in a hot (around 60 ℃), humid space for 5-6 weeks.
