This aged Oolong is a unique aged oolong tea from Taiwan. It has a complex profile and intriguing flavours reminiscent of rum. This tea comes from Mingjian Township of Nantou County and ia based on Jin Xuan 金軒 (T-12) cultivar leaves. It was harvested and processed in 2009 and has been aged since then. Every 3 years they take the tea out of the warehouse to expose it to a sunlight and re-roast it at low temperature to reduce moisture and refresh the tea. This kind of roasting does not impart any new roasted flavours, instead it reinvigorates the aged tea and introduces more balance and complexity to the flavour. It produces a light amber liquor that is quite aromatic with notes of wood and tobacco with hints of fruit. The taste is superbly smooth and surprisingly rum-like!
