White Hair Peony Superior

| The best quality and most refined of all white teas, originating from the Zhang He region of the Chinese province of Fujian. This white tea is without reservation a selection of only the finest uppermost buds of the Dai Bai tea plant (Great white tea plant), and is celebrated not only for its refined and balanced sweet taste, but mainly for its exceptional detoxifying effects and ability to cool the organism (reduce body temperature). The tea buds are entirely covered with white down along their entire length, and after infusion in a tea bowl this down stands upright, creating the illusion of a fantasy stalactite landscape. It is gathered in the period from 15 March to 10 April, and only closed and undamaged buds are gathered, whilst the remainder are used for lesser quality sorts of this tea, which are often falsely sold on the market as the highest quality type. |

| Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. White teas are exceptionally subtle, and so to obtain a more distinctive taste it is necessary to use more leaves than for other tea varieties. Use approximately 4g of tea leaves (2-3 teaspoons) for each 150ml of tea, or to your own taste. Brew the necessary amount of tea in hot water at a temperature of 70-80°C for approx. 3-4 minutes for the first infusion. This longer time is necessary for full opening of the leaves which tightly enclose the tea buds. For the second infusion it is possible to reduce the infusion time to approx. 2 minutes and extend the time again for further infusions. |

| Jemný, lahodný čaj. Ze začátku jsem testovala, jaké množství a doba louhování mi bude vyhovovat a teď se mi daří připravit velmi dobrý čaj.
