Que She originates from the Chinese province of Zhejiang and is considered one of the best quality green teas. The words "Xiang Pian" in its name mean that it has undergone a process of perfuming by jasmine blossoms. This several-phase process, in which the leaves are dried in the presence of a large quantity of jasmine blossoms, gives the tea an intensive, penetrating to intoxicating aroma of jasmine, which is maintained even in repeated infusions of tea. The leaves of this tea are small and dark, in the shape of birds’ tongues, frequently slightly curled. The infusion is a rich yellow to yellowish-green colour, and it retains this colour also in further infusions. Jasmine bird’s tongue and Jasmine dragon’s eyes are the best teas available for fans of quality green tea perfumed with jasmine blossoms. There are a range of teas bearing the name Bird’s tongue, but the one true original comes from the Zhejiang province and is available each year only in a limited quantity.

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 2g of tea leaves (1-2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 75-85°C for a period of 1 minute for the first and second infusions. With further infusions progressively extend the brewing time.
