In white teas everyone is struck upon first glance by the volume of the unit mass of the tea, which is higher than in other types. This is due to the fact that after wilting the tea is dried and is not processed further, whereas other teas are usually processed into a more space saving form. Notice the downy leaves, which at the moment of harvest tightly surround the buds and help them grow. This high quality white tea gives a typically refined infusion, its taste has honey, nut and floral tones, and is highly dependent upon the amount of tea used in the infusion. A study published in Science News (15 April 2000) reveals that white tea may contain up to 5 times more active agents for protection against cancer than green tea.

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. White teas are exceptionally subtle, and so to obtain a more distinctive taste it is necessary to use more leaves than for other tea varieties. Use approximately 4g of tea leaves (2-3 teaspoons) for each 150ml of tea, or to your own taste. Brew the necessary amount of tea in hot water at a temperature of 75-85°C for approx. 1-2 minutes for the first infusion. Gradually extend the infusion time for further infusions.

Vůně kouřově světle hnědo-oranžového nálevu je nasládlá, připomíná kakao a vyschlé ovocné dřevo. V chuti se mísí pečené kaštany a pyl květin. Příjemný krátký sladký aftertaste. 4 dobré nálevy.
