Zhejiang Gunpowder AAA - Zhu Cha

| This green tea, the name of which can be translated from China as "pearl tea", gained its Western name of Gunpowder thanks to its appearance. Its tea leaves, which after withering are rolled into small balls or pearls, "explode" after pouring on water just like gunpowder and unfurl into neat leaves. Gunpowder is a very well known tea, and ranks amongst the first teas officially exported from China, the first records of it dating from the period of the reign of the Tang dynasty in the 7th century, and the manner of coiling the leaves into small balls has been typical of this tea since the very beginnings of its cultivation. The main reason why this shape was chosen was to protect the leaves from damage during storage and transit. The tea market offers a large quantity of classes of this tea, from various producers in various locations in China, Taiwan and Sri Lanka. Taiwanese Gunpowder dates back to the beginning of the 18th century and is in fact a type of Oolong tea and not a green tea. Our Zhu Cha originates from the province of Zhejiang, and for optimum balancing of the quality to price ratio we have selected a higher medium class tea for our store. Chinese Gunpowder has the classic, typically raw taste of green tea with a delicate smoky character, which is accompanied by a subtle, sweet floral aroma, whilst the infusion surprises with its pleasant greenstone colour. The taste of Zhu Cha tea is relatively complex, but the full flavour with all its attributes is gained only when using water at a temperature of approximately 75-80 °C, and for the second infusion only a few degrees higher. It is better to use approximately 20-30% more tea than in the case of typical green tea. The tea contains a large quantity of active substances supporting detoxification of the organism, and is frequently drunk with food. However, it is not only its distinctive taste and low price that predetermine the tea for consumption together with food, but also the fact that the tea contains an unusually high amount of fluoride, which prevents the formation of dental cavities, as a result of which it is frequently encountered in Chinese restaurants as an alternative to cheap jasmine teas. World famous tea ceremonies in the Magrheb region of North Africa (Morocco, Algeria, Tunisia) use Gunpowder as a base for their mint tea ceremony. |

| Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 3g of tea leaves (2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 75-80°C (about 90 seconds after boiling) for a period of 60-90 seconds for the first and second infusions. With further infusions progressively extend the brewing time. Pour only as much tea as you will consume immediately, do not keep for a longer period. Do not use a metal strainer, this will diminish the energy and biological value of the beverage. |
