In Chinese Feng Huang means Phoenix, sometimes called Red bird of the West, one of four mystical beasts of Si-Ling. These myths surrounding Oolong originate from the mountain range of the same name in the Chinese province of Guangdong. Dan Cong is a very old tea which dates back to a period 900 years ago, and its leaves originate from the Shui Xian tea plant, which grows upright from a single trunk, with branches opening outwards like umbrellas. Feng Huang Oolong is divided into three quality categories. Feng Huang Shui Xian is the most common of these, one quality class higher is Feng Huang Lang Cai and the highest class of this tea is Feng Huang Dan Cong, which always originates from one specially selected plant and which must be harvested only in autumn between one and four in the afternoon and exclusively on cooler, sunny days, in order to preserve its legendary aroma (ten scents of Feng Huang). During the reign of the Song dynasty this was the emperor’s tea. The slightly crinkled, long brown leaves are very aromatic and produce a sweet infusion with a peach flavour, reminiscent of the popular Chinese longan fruit (with a taste similar to lychee).

Brewing guide
Prepare tested water for the tea infusion with which you have experience, or use ordinary tap water which has been left standing for a sufficient period, preferably overnight, ideally rid of chlorine. Rinse the teapot and cups with hot water. Use approx. 2-3g of tea leaves (2 teaspoons) for each 150ml of infusion or to taste. Brew the necessary quantity of tea in hot water at a temperature of 100°C for a period of 1 minute for the first and second infusions. With further infusions progressively extend the brewing time.
